Rosemary is a woody perennial herb that is extremely fragrant.  It is an evergreen, and it is extremely easy to grow.  Long before I planted my small garden along the side of our house, my wife planted a small plant.  It was little more than a twig, but with almost no effort whatsoever, it grew into a massive plant.  Her primary reason for planting the herb actually had nothing to do with cooking.  My wife actually wanted to plant it to keep mosquitos away from the house.  Regardless of her reasoning, the plant grew, and I quickly realized how much flavor I could add to a dish with just a few small, fresh clippings from this bush.  One of our favorite combinations is rosemary and pork.

Ingredients for Rosemary Pork:

  • 3 lbs. of pork – I use a half loin and cut it into 3/4 inch chops; however, you can buy precut chops or even bone-in chops, depending on your personal preference.
  • 12 springs of fresh rosemary (approximately 5 inch sprigs)
  • 1/2 cup of olive oil

First, I strip the leaves from the sprigs of rosemary and put them in a gallon zipper bag.  Then, I add the olive oil and pork to bag.  Next, I make sure the pork is thoroughly covered.

I have cooked them pretty quickly following this step, but ideally, I try to marinate in the refrigerator in the mix, if you have the time.

When I’m ready to cook the pork, I spread it flat across a baking dish, sprinkling a little salt and pepper on each side as I spread them.

The pork should bake in the oven at 350 degrees for 50 minutes (time may vary depending upon the thickness of the pork chops).
