Spinach and Chicken Alfredo

So you all know that sometimes you just need something you can throw together quickly.  It may not be the gourmet recipe you would serve at a dinner party, but a hungry family is staring at you, and you still want it to be delicious.  That is exactly how this recipe came about.  I wanted something tasty, but I also wanted dinner on the table quickly, thus I came up with this quick, easy version of chicken alfredo with spinach.  It is creamy and delicious.  Most significantly, it takes about fifteen minutes from start to finish.

Of course, you can cook chicken, but the key to this recipe is quick and easy.  I buy the rotisserie chickens cooked at the grocery store often.  In fact, during the week, my lunch is often rotisserie chicken and fresh veggies, but I like to have the pre-cooked chicken on hand, because it can be used in so many different recipes.  For this particular dish, I cut the breast off of a rotisserie chicken and chop it into bite-sized cubes.  I usually leave the skin on for the extra flavor, but that does add extra fat, so you can remove it if you prefer.

The Pasta

Of course, Fettuccine is the pasta most commonly paired with alfredo, and if that is your preference, it will certainly be perfect in this dish.  I often use linguine, such as a personal preference, so this recipe includes one box of Dreamfield linguine.  Prepare the pasta per package directions.

The Alfredo Sauce

First, I use one package of frozen, plain spinach (9 ounce).  I thaw it in the microwave, just enough to where I can drain off any moisture and dump the spinach from the package into a very large sauce pan.

In the same sauce pan, I combine the following ingredients:

  • A stick of butter
  • A teaspoon of minced garlic
  • 1 cup of heavy cream or milk
  • A teaspoon of Italian seasoning
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper

I allow that to simmer over medium head until there is about 2 minutes left on your pasta.  Then add the following:

  • Cubed chicken

  • Parmesan Cheese – 1 cup
  • Mozzarella Cheese – 1 cup

Ingredients

  • Both breasts from a rotisserie chicken, cubed
  • 16 ounce box of pasta
  • A stick of butter
  • A teaspoon of minced garlic
  • 1 cup of heavy cream or milk
  • A teaspoon of Italian seasoning
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • Parmesan Cheese - 1 cup
  • Mozzarella Cheese - 1 cup
  • One package of frozen, plain spinach (9 ounce)

Instructions

  1. Make pasta according to package directions
  2. Thaw and drain spinach
  3. In a extra large sauce pot, combine spinach with butter, garlic, cream, and other seasonings
  4. When pasta is nearly ready, stir chicken and cheese into sauce
  5. Drain pasta, and after the cheese melts, toss pasta in sauce

Final Preparation

Stir your sauce and cheese until melted.  Next you drain your pasta, and add it to the sauce.  Make sure to thoroughly stir, so that everything is blended.  You can then garnish with extra Parmesan cheese.
